Big news to share!

As if my life isn't crazy enough, I am fulfilling a dream of mine. I have been excepted into the nursing program!!! I start January 17! I'm so excited!!! Lots to do before then.

Grocery list and menu

I get asked often what groceries I buy and what meals do I fix? Here are some groceries I buy.

- skinless boneless chicken breast
  or whole chickens for roasting
- ground turkey lean
-lean pork loin
- lean beef (Mike has to have his red meat)
-  light or non-fat yogurt
- nonfat cheese
- nonfat sour cream
- I can't believe it's not butter
- Smart start sticks
- eggs 3 dozen for 2 wks
- Mrs. Bairds country 100% whole wheat
  and sandwich thins/bagel thins whole wheat tortillas
- Mission
- whole wheat flour
- sugar in the raw
- brown sugar
-agava nectar
- honey
dark chocolate chips
- Mortons light salt and sea salt
- Mrs. Dash ( many flavors to choose from) other unsalted herbs
- a good olive oil (not the most expensive but not the cheapest) 
- canned tomatoes, petite diced, crushed, sauce (I always keep these around for sauces and soups)
- canned beans, black, kidney, pinto...NOT baked beans and always rinse your beans.
-Low salt/fat chicken and beef broth
- fresh veggies and fruits , frozen is ok, no canned
-garlic clove
 

Here are meals we normally have.
- Homemade breakfast burritos w/turkey sausage and veggies
- homemade breakfast sammies w/ egg, cheese, bacon and veggies
-whole grain low fat cereal (measure servings) and skim milk
- leftover roasted chicken sandwich for lunch w/ carrot sticks and a yogurt
- leftover grilled chicken on butter lettuce veggie salad w/ fat free balsamic vinaigrette, fruit and homemade bread
- barilla whole wheat pasta, homemade tomato sauce w/ ground turkey, tossed salad, homemade bread with olive oil rubbed with garlic clove.
-Grilled turkey, beef, or deer burgers
Mike and Nash love to hunt, we love venison. It is very lean and full of vitamins.
-Chicken and beef fajitas made with my own seasonings, not from a packet. Served with all the veggies and guacamole and tostitos.
-Tacos ( my seasoning) same as above
- crockpot lasagna
- homemade low fat potato soup, chicken posole, chicken noodles
- smoothies
- popcorn
-apples or celery with peanut butter
-rice cakes with nutella Yum!

Portion and serving sizes are important!!!

Ok, I'm getting hungry! I could go on and on, as you can see everything is normal food I just made it healthy. There has been a few disasters we won't talk about but if I'm not sure or want a new idea I just google it...It's that simple. A recipe site usually pops up and I fine what I want with all the nutrition info. Alright, enough for now, I have to eat some lunch I'm starving!

Comfort Foods

Mashed potatoes with gravy, mac & cheese, fried chicken, chicken fried steak, piled high apple pie, ice cream and I can't forget my mamma's famous stuffing. All these these foods, and then some, we are raised and taught to know them as "comfort food". Well, it's those "comfort foods" that helped to make me obese. understand it wasn't only the food. It was the choices I made of the amount I took in and how often I indulged but these foods are not healthy choice to make unless we make them in a healthy way.

I am often asked do I miss certain foods or crave this or that? I don't miss anything because I don't say I can't have anything....I choose not to have it. It's all in how we look at food and how it makes us feel. To be honest, when I was obese and eating unhealthy, I didn't feel good. I didn't feel good about what I cooked when I ate or after I ate it. I was usually miserable, tired and had no desire to do anything. Not only was it hurting me but my husband and kids as well. Don't get me wrong the food tasted great. Not to toot my own horn but I can rock it in the kitchen.

Now when I cook I know it's healthy. I know that what I'm putting in my body is good for me and it's good for my family. Sure I've eliminated some things from our pantry and exclude choices when we eat out...like; fried foods, breaded food, white flour, white sugar just to name a few. It's all about change to make a difference. If we don't change things will stay the same. If we change for a     little while, see results, then go back to what we were doing, we go back to where we were. That is why diets don't work! It's a life change that works!!

It's a small sacrifice for a life change.
It's a small sacrifice to have energy again.
It's a small sacrifice to get your life back.

                         It's a small sacrifice to save your life.

Comfort is knowing that the food I choose to put in my body is not going to make me overweight or obese again. That through God's Strength this experience has and is changing my life. Sure I loved the taste and enjoyed the food of my past but thinking back I don't believe it really comforted me. Not like the comfort of success and Victory I feel now.

Remember- You have to CHANGE Your life to CHANGE YOUR LIFE!

Halloween! Thankgiving! Christmas Parties! Oh My!

I can't tell you the coutless times I HAD to pray before walking into a Christmas Party or a dinner at church, praying that I wouldn't over eat, that I would have self-control and make good choices. I would pray during the dinner as well, when I would want something that I shouldn't or want more than I needed.

After the dinner I would give the Lord praise for helping me and thank Him for being with me. It's all about who we allow to get the victory. Even if I chose to have a small portion of dessert We, God and I, still got the Victory. It wasn't a bad choice because I didn't have several desserts, I chose one and it was small. It's ok to treat yourself but set limits, only once a week or twice a month. It's when we fill a plate of desserts that there is a problem. I know I've done it, they all look so good and ya don't know what to pick. I'll just take a little of each and before you know it you have a plate full of guilt that you don't have room for and it will make you fill more miserable than you already do. 

This is what I use to do, I would take a little of everything even if it was the same thing but made by somebody else. I would even eat my own food! My plate would be way too full. then I would go back for more plus dessert. This is what I do now, I look at the food before I pick, I see what looks the best then I get that one. If there are 3 plates of turkey we don't need to pick from each, right? That's how we go overboard, pick the one that looks the best (the least dry. Haha)  If it's a big plate, try to space your food out to see parts of the bottom of the plate. Don't go back for seconds, no matter how good that dish was. When you make your way to dessert pick the one that looks the best, that you want to run that extra mile for, eat it and enjoy.

Now this, I see this all the time and it drives me crazy! Please do not graze!! It doesn't matter if your skinny, DON'T GRAZE! It is tempting for some to stand next to the Hor d'oeruvre table talking and nibble here and nibble there. That's gross! I want to make them a plate and hand it to them. Not only is it germy and unappetizing to others it also adds a lot of uncountable calories to your meal. And it's just GROSS!
